Southwest Chicken Grilled Cheese


  • 2 slices Mrs Baird’s® Large White Bread
  • 1 tablespoon olive oil
  • 1 cup bell peppers, diced
  • 1 cup black beans, rinsed and drained
  • ½ cup corn
  • ½ cup onion, diced
  • 1 garlic clove, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • ¼ cup chopped cilantro
  • ½ cup tomato, diced
  • ½ cup grilled chicken, diced
  • 1 tablespoon butter
  • 6 slices Monterey Jack cheese
  • Sour Cream Cilantro Sauce Ingredients:
  • ½ cup sour cream
  • ¼ cup greek yogurt
  • ¼ cup cilantro, minced
  • ½ lime, juice
  • 1 teaspoon olive oil
  • Salt and pepper to taste


  1. Heat olive oil in a medium pan over medium-high heat. Add the bell peppers, black beans, corn, onion, garlic, cumin, chili powder, salt, and pepper. Cook for 2-4 minutes until the bell peppers are soft. Turn off heat and stir in cilantro and tomato.
  2. In a clean skillet over medium heat, melt butter and add a slice of bread. Top with cheese slices, grilled veggies, grilled chicken, and more cheese. Top with another slice of bread and cook, flipping once until both sides are golden brown, about 3 minutes per side.
  3. For the sour cream cilantro sauce, whisk all ingredients in a bowl until combined. Serve with finished sandwiches. Enjoy!
